Keep it lean

We should all choose lean meat for meals, but what is lean meat? Cuts like pork fillet and chicken breast which have reduced fat within the meat fibres, and the fat around them can be removed.  White fish is particularly lean.  Beef fillet is slightly higher in fat as it contains some fat within the fibres, but is better than a lamb chop!
Make sure you trim all visible fat from your meat, and liven up lean cuts with fresh herbs, lemon juice, sundried tomatoes and red onions!
