Potato Wedges with Cheat's Aioli Recipe

Recipe Ingredients

  • 6 large SPAR Freshline potatoes, cut into wedges
  • 3 tablespoon SPAR olive oil
  • Salt and pepper, to taste
 

For the aioli

  • 1 cup SPAR mayonnaise
  • 3 tablespoons lemon juice from a SPAR Freshline lemon
  • 1 teaspoon lemon rind, fine from a SPAR Freshline lemon
  • 1 teaspoon SPAR wholegrain mustard
  • 1 SPAR Freshline garlic clove, finely minced
  • ½ teaspoon salt
  • ½ teaspoon pepper

Recipe Method

  1. Preheat oven to 180°C.
  2. Place the potatoes in a baking tray and drizzle with oil.
  3. Season with salt and pepper. Toss to combine.
  4. Cook in the oven for +- 35 minute or until the wedges are golden brown
  5. For the aioli: Place the mayonnaise, lemon juice, rind, mustard, garlic, salt and pepper into a bowl and mix well.
  6. Place the wedges onto a platter with a bowl of aioli and garnish with parsley.
