Quick Soy and Ginger Baked Fish Recipe

A healthy and delicious meal of stir fried veg and baked fish in a honey, soy and lime marinade

Recipe Ingredients

  • 4 SPAR Freshline spring onions, cut into strips
  • 1 Tbsp (15ml) freshly grated SPAR Freshline ginger
  • 1 clove SPAR Freshline garlic, crushed
  • 2 Tbsp (30ml) SPAR soy sauce
  • Juice of a SPAR Freshline lime
  • 1 Tbsp (15ml) SPAR honey
  • ½ tsp (3ml) sesame oil
  • 4 SPAR petite hake fillets (400g)
  • Freshline SPAR red chilli to taste

To serve

  • 1 punnet (125g) SPAR Freshline mange tout (stir fried)
  • 10–12 SPAR Freshline baby carrots, peeled and cut in half (stir fried)
  • Cooked rice

Recipe Method

  1. Preheat oven to 180°C
  2. Prepare 4 sheets of baking paper and 4 sheets of aluminium foil, both cut into 35cm squares.
  3. Mix together soy sauce, water, lime juice or vinegar, honey or sugar, pepper and sesame oil.
  4. Cut the spring onion in half, thinly slice the white part of the spring onion on a diagonal and slice the green part of the spring onion along its length so it resembles thin threads.
  5. Soak them in iced water to enable them to curl up.
  6. To assemble the fish parcels, first lay down the aluminum foil, followed by baking paper.
  7. Bake the fish in a preheated oven for 10 minutes or until just cooked through. Stir fry the veggies..
  8. Open the parcels and garnish with spring onion curls. Serve immediately with rice and stir fried vegetables.
