Spiced Apples for Gammon Recipe

Prepare your gammon and include these spiced apples on the side during the roasting time; a perfect partner to the pork.

Recipe Ingredients

  • 10 Freshline ThriftPak Granny Smith apples
  • 6 SPAR shortbread biscuits, roughly broken
  • 85 g dried fruit cake mix
  • 1 ml ground cloves
  • 50 ml brandy or SPAR apple juice
  • 1 ml salt
  • 10 ml whole-grain mustard mixed with 30 g SPAR butter
  • Optional

  • 20 whole cloves
  • 10 fresh sage leaves


Recipe Method

  1. Rinse and pat dry the apples. Core each apple generously, and slit the skin in a few places from the cavity edge outwards. Secure a sage leaf on the outside of each apple, with two cloves (if you are using the cloves and sage).
  2. In a small mixing bowl, combine the shortbread, fruit, cloves, brandy or apple juice and salt. Set aside for 5 minutes to soften. Mash with a fork.
  3. Spoon this filling into the apple cavities and dot the mustard-butter on top.
  4. Place the apples close up against the gammon during its last 30 minutes glazing kettle braai/oven time.

Hints & Tips

Use this same filling in the cavities of canned drained SPAR peach halves, cooked facing upwards. Omit the clove and sage leaves step.
