Chorizo, Feta and Peppadew Omelette Recipe

There's so much going on in this spicy, meaty omelette that it would make an excellent quick dinner.

Recipe Ingredients

  • 3 SPAR eggs
  • 1 large SPAR Freshline baby marrow, finely grated
  • 1 Tbsp finely chopped SPAR Freshline onion
  • Salt and milled pepper
  • 1 Tbsp SPAR butter
  • 4 peppadews, chopped
  • 6 slices SPAR feta
  • 1/2 link SPAR Griller Chorizo, sliced and quickly fried in a hot pan

Recipe Method

  1. Mix the eggs well then add the baby marrow, onion, salt and pepper.
  2. Heat a medium non-stick pan with butter and then add the egg mixture. Using a spatula, carefully pull the sides that have started cooking to the middle and let more raw egg run into those spaces.
  3. Cook the omelette to your liking.
  4. Fill with peppadews, feta and chorizo.
