Easter Chocolate Cupcakes Recipe

These spicy cupcakes are like home-made hot cross buns without the hassle! A chocolate brownie pre-mix jazzed up with some fruit and spice for a perfect Easter treat!

Recipe Ingredients

  • 1 packet SPAR Chocolate Brownies premix
  • 60g (½ cup) SPAR Cranberries
  • 75g (1 cup) SPAR Currants/Raisins
  • 10 ml (2tsp) ground cinnamon
  • 5 ml (1 tsp) ground nutmeg

Icing

  • 12,5 ml ( 1tsp) SPAR Lemon Juice
  • 80 g SPAR Icing Sugar, sifted

Recipe Method

  1. Pre-heat the oven to 180°C. Grease a 12- hole muffin tray and line with paper cases
  2. Prepare the SPAR Chocolate Brownie Premix according to the instructions on the packet.
  3. Fold in the remaining ingredients into the batter and pour into the prepared muffin tray. Bake in the oven for 10-15 minutes. Remove from the oven and stand to cool.
  4. For the icing, mix the lemon juice and icing sugar until a smooth paste is formed. Pour the icing into a piping bag and pipe a cross on top of each cake.
