Frozen Cassata Recipe

Try this creative quick adaptation of a traditional Cassata; great for busy families looking for a special summer dessert. Fabulous for easy festive season entertaining.

Recipe Ingredients

  • 1 packet SPAR sponge finger biscuits
  • SPAR orange juice, or Contreau liqueur
  • 1 tub SPAR cheesecake mix (400 g)
  • 75 g tub mixed glace cherries
  • 75 g tub candied citrus peel
  • 75 g tub chocolate vermicelli or buttons
  • 1 ml almond essence

Recipe Method

  1. Line the base of a standard loaf pan with10 biscuits placed close to each other down the length. Sprinkle on a little orange juice or liqueur.
  2. Beat the cheesecake and cold water together, as per on-pack instructions.
  3. Blend in the remaining ingredients.
  4. Pour half of this mixture onto the base biscuit layer, place a second biscuit layer using another 10 more biscuits sprinkled with juice or liqueur, then cover this with the remaining cassata mixture.
  5. Chill (for sliceable cake dessert) for 4 hours, or freeze overnight for a frozen ice-cream dessert.
  6. Turn out and slice. Optional: Drizzle melted chocolate over before serving.

Hints & Tips

Drizzled melted chocolate or crumbled Flake chocolate across the top to make this dessert truly special.
