Fruit and Nut Bars Recipe

Perfect for lunch boxes, these bars taste great and will keep for up to two weeks!

Recipe Ingredients

  • 1 bag (250g) SPAR nuts, raisins, berries and seed mix
  • 1 cup (250ml) whole rolled oats
  • ½ cup (125ml) oat flour (grind some oats in a coffee grinder)
  • 2 Tbsp (30ml) desiccated coconut
  • Pinch of salt
  • ¼ cup (60ml) SPAR coconut oil (melted)
  • ¼ cup (60ml) SPAR peanut butter
  • 2 Tbsp (30ml) SPAR honey
  • 1 tsp (5ml) vanilla extract
  • 1 egg white

Recipe Method

  1. Preheat the oven to 160°C. Grease and line a 20cm x 20cm shallow baking tray.
  2. Mix the nut and seed mix, oats, oat flour, coconut, and salt.
  3. Heat the coconut oil, peanut butter and honey together until melted and stir through the oat mixture along with the vanilla and egg white.
  4. Transfer the mix to your baking dish, leveling it out using the back of a spoon. Make sure you press it in quite tightly.
  5. Bake for 25 - 30 minutes or until golden and fragrant. Remove, allow to cool for a few minutes, cut into squares and leave to cool. They never go completely hard but keep them in an airtight container to keep them fresh for up to two weeks.
