Green Bean and Potato Salad Recipe

Potato salad or bean salad? Why not both with this sour cream, potato and bean salad with a little mustard and red onion for extra piquancy.

Recipe Ingredients

  • 4 tablespoon lemon juice
  • 4 tablespoon SPAR olive oil
  • 1 SPAR Freshline garlic clove, minced
  • 2 teaspoon SPAR Dijon mustard
  • 2 teaspoons salt, divided
  • 1/4 teaspoon black pepper
  • 900g SPAR Freshline potatoes, quartered
  • 200g SPAR Freshline green beans, trimmed and halved
  • 1 small SPAR Freshline red onion, thinly sliced
  • 4 tablespoon SPAR sour cream
  • 2 tablespoon SPAR Freshline chives, chopped
  • Red chilli flakes, to taste

Recipe Method

  1. In a large bowl, whisk together the lemon juice, olive oil, garlic, mustard, 1 teaspoon of salt and pepper. Set aside.
  2. Place the potatoes in a large pot and cover with cold water.
  3. Stir in 1 teaspoon salt.
  4. Bring to a boil and cook until soft, 10 - 15 minutes.
  5. Drain the potatoes and place into lemon mixture and coat well.
  6. Refill the pot with water and bring it to a boil.
  7. Prepare a bowl of iced water nearby.
  8. Drop the green beans into the boiling water and cook for 2 minutes.
  9. Drain and immediately place into the iced water.
  10. After 1 minute, drain and place on a kitchen towel to dry.
  11. Add beans and onions into potatoes and toss well.
  12. Season, to taste.
  13. Transfer to a platter.
  14. Top with the red onions.
  15. In a small bowl mix the sour cream with 1 tablespoon of the chopped chives.
  16. Drizzle over the salad and sprinkle with the rest of the chives, chilli flakes and black pepper.
