Pancake Party Recipe

Pancakes are so easy to mix and cook, and with a few pans going at the same time, you can produce several dozen in a short time. If you have several crepe pans, why not turn your kitchen into the party venue and let guests cook and flip their own pancakes before filling and rolling up with their choice of sweet and savoury fillers.

Recipe Ingredients

  • 480 g   SPAR cake flour
  •  5   ml salt
  • 20  ml baking powder
  • 250 ml SPAR canola oil
  • 2 large SPAR eggs
  • 1  litre  water
  • 20 ml  SPAR white vinegar

Suggeested Savoury Fillings

  • Chilli beef mince – SPAR grated cheese , avocado pear cubes and a bowl of sour cream on the side
  • Creamed Chicken and mushroom  (like for Chicken a la King)
  • Roasted Vegetables:  Lightly roast together SPAR Freshline Veg For Two butternut and sweet potato cubes, coloured sweet pepper strips and garlic cloves, with olive oil drizzled over

Suggested Sweet Fillings

  • SPAR Classic Vanilla Ice cream with crushed nut brittle blended in. Chocolate syrup served separately
  • Stewed fresh apple slices sweetened with maple flavoured syrup – SPAR Vanilla Custard as an accompaniment
  • Caramelised condensed milk and crushed Peppermint crisp chocolate
  • Toasted coconut marshmallows, fresh strawberry slices,  sweetened whipped cream or mascarpone
  • The ever popular cinnamon-sugar or maple-flavoured syrup

Recipe Method

  1. Measure all the dry ingredients into a large mixing bowl.
  2. Combine the remaining ingredients in a jug and pour into the dry ingredients, using a hand whisk to obtain a smooth mixture.
  3. Leave the pancake batter aside for at least 30 minutes before cooking.
  4. Heat a 22 cm-diameter non-stick pan and coat lightly with non-stick cooking spray.
  5. Using an 80 ml baking measuring cup as a measure for each pancake, pour this amount of batter into the heated pan. Rotate the pan immediately until the batter covers the entire pan base.
  6. After a minute or so, flip the pancake over to cook on the other side too. Slide the pancake from the pan onto a platter.

Hints & Tips

  • Even if using non-stick surface pans, a light greasing with sunflower oil at regular intervals is advisable.
  • Always provide a vegetarian filler option too, if uncertain about your guest’s preferences.
  • Interleaf cooked pancakes, flat, in 5’s, with cling-film, wrap as a parcel, and either chill or freeze until reheating on the day of the party.
