Peppered Ostrich with Citrus Salad Recipe

Ostrich is a low-fat alternative to steak. Pair it with some fresh naartjie, orange and grapefruit for a delicious and healthy salad.

Recipe Ingredients

  • 6 SPAR Select Ostrich Steaks
  • Salt, to taste
  • 3 tablespoon SPAR mustard
  • 4 tablespoon, freshly ground pepper
  • 1 tablespoon SPAR olive oil
  • 2 SPAR Freshline large oranges
  • 1 large SPAR Freshline pink grapefruit
  • 2 medium SPAR Freshline naartjies
  • 1/4 SPAR Freshline cucumber, thinly sliced
  • 1/4 SPAR Freshline red onion, thinly sliced
 

Garnish

  • SPAR Freshline mint leaves and SPAR Freshline pomegranate jewels
 

For the vinaigrette

  • 3 tablespoons SPAR olive oil
  • 3 tablespoons pomegranate juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ½ teaspoon SPAR honey

Recipe Method

  1. Season ostrich steaks with salt and smear mustard over all the steak
  2. Roll in black pepper
  3. Heat a frying pan over a medium heat. Add 1 tablespoon olive oil.Add the steaks and fry over a high heat for 3 minutes on each side or cooked to your preference.
  4. Remove from the pan and set aside to rest before slicing.
  5. Peel the citrus, removing as much pith as possible, and slice into circles.  Remove any pips.
  6. Layer fruit on a serving dish, sprinkle salt to taste.
  7.  Top with cucumber and red onions
  8.  To make the vinaigrette, whisk together the olive oil, pomegranate juice, vinegar, lemon juice, rind, and honey until well combined.
  9.  Drizzle over the salad.
  10.  Place the sliced ostrich steak on top of the citrus salad.
  11. Garnish with fresh mint and pomegranate jewels.
