Potato and Red Onion Skewers Recipe

A new way to prepare herbed, garlic roast potatoes with added roasted onion goodness.

Recipe Ingredients

  • 3 SPAR Freshline large potatoes, cut into wedges
  • 1 SPAR Freshline Red onion, cut into wedges
  • 3 TBSP SPAR Olive oil
  • 1 TBSP mixed herbs
  • 1 SPAR Freshline garlic clove, finely chopped
  • ½ tsp salt
  • ¼ tsp potato spice
  • ¼ tsp black pepper

Recipe Method

  1. Preheat oven to 200° c.
  2. Soak the wooden skewers for 30 minutes in water.
  3. In a bowl mix together the oil, herbs, garlic, salt, potato spice & pepper.
  4. Add the potato and onion wedges and mix well.
  5. Take a skewer and thread through the potatoes and onion – alternating. Making 6 skewers.
  6. Place onto a baking tray lined with baking paper.
  7. Bake for 20-25 minutes or until golden brown all around.
