Pulled Pork with Coleslaw Recipe

Tender, slow cooked pork in a sweet and spicy marinade with a fruit and fennel infused coleslaw. Perfect for a summer evening with friends.

Recipe Ingredients

  • 50g of good quality salt
  • 35g of SPAR Brown Sugar
  • 6g of fennel seeds, toasted
  • 6g of freshly ground SPAR Black Pepper
  • 2g of SPAR Freshline sage leaves
  • 2g of SPAR Freshline rosemary leaves
  • 1.5 kg SPAR Your Butcher Pork Leg SQ cut (2 steaks)

Marinade

  • 1½ cups (375ml) SPAR Tomato Sauce
  • 1½ cups (375ml) water
  • ½ cup (125ml) SPAR Apple Cider Vinegar
  • 2 tsp (10ml) paprika
  • 2 tsp (10ml) dried mustard powder
  • 1 tsp (5ml) ground cumin
  • 2 tsp (10ml) chili powder
  • ½ cup (125ml SPAR Brown sugar
  • 1 SPAR Freshline onion, finely chopped
  • 2 cloves SPAR Freshline garlic, crushed

Coleslaw

  • 1 SPAR Freshline Baby Purple Cabbage
  • 1 SPAR Freshline Baby Green Cabbage
  • 1 SPAR Freshline Carrot, julienned
  • 1 SPAR Freshline Fennel Bulb, finely sliced
  • 1 SPAR Freshline Red Onion, finely sliced
  • 1 SPAR Freshline Green Apple, julienned
  • handful of parsley and fennel fronds
  • 5g toasted fennel seeds

Dressing

  • ¼ cup (60m) SPAR White Wine Vinegar
  • ½ cup (125ml) SPAR Mayonnaise
  • 1 Tbsp (15ml) SPAR Castor Sugar
  • Juice of 1 SPAR Freshline Lemon
  • 4 SPAR Bakery Large White Wraps

Recipe Method

  1. Heat the oven to 200°C
  2. Mix all the seasoning ingredients together and rub the pork with 2 Tbsp of the seasoning and set aside in a deep roaster.
  3. Combine all the sauce ingredients in a pot and bring to a boil.
  4. Reduce heat and simmer for 20 minutes.
  5. Pour the sauce over the pork, cover tightly with foil and place in the oven.
  6. Turn the heat down to 150ºC and cook for 1 hour. Turn off the oven and leave to cook in the residual heat overnight.
  7. Remove the bone, shred the pork and mix with the sauce.
  8. Adjust the seasoning with the pork rub if need be.
  9. To make the coleslaw, mix the cabbage, carrots, fennel, onion and apple together in a large bowl.
  10. Add the herbs and fennel seeds and mix through.
  11. Add the dressing ingredients together in a jar and shake well.
  12. Pour over the slaw and serve with the pork and wraps.
