Spinach & Ricotta Fritters Recipe

These delicious and healthy fritters can be eaten by themselves or served as an elegant side dish.

Recipe Ingredients

  • 250 g ricotta
  • 1/4 cup (35 g) SPAR cake flour 
  • 1 x SPAR egg
  • 1 cup spinach, washed and prepped 
  • 1/4 cup Marksbury Select Parmigiano Reggiano (parmesan), finely grated 
  • salt and pepper 
  • 1 Tbsp (15 ml) butter 
  • 1 Tbsp (15 ml) oil
  • handful of fresh basil 
  • handful baby spinach 
  • 2 Tbsp (30 ml) sour cream 
  • 2 Tbsp (30 ml) SPAR olive oil 
  • 1/2 a lemon (for serving)

Recipe Method

  1. Place the ricotta and flour into a bowl. 
  2. Process the egg and spinach together in a blender until smooth. 
  3. Add to the ricotta along with the parmesan,lemon rind, salt and pepper. Mix well. 
  4. Heat the butter and oil over medium heat in a large non-stick pan. 
  5. Fry tablespoons of the mix at a time,spreading it out slightly as it lands in the pan. 
  6. Make sure you let a crust form on the one side before turning them over to cook on the other side. 
  7. It takes approx. 3 mins to cook on one side. 
  8. Serve with fresh basil, baby spinach leaves and a dollop of sour cream. 
  9. Add a drizzle of olive oil and a squeeze of lemon for extra deliciousness.
