Sweet Potato Bread Recipe

Recipe Ingredients

  • 750  g    brown bread wheat flour
  • 250  g    SPAR Cake Flour
  • 500 g pkt SPAR Freshline Sweet Potato, cubes
  • 10 ml     salt
  • 1sachet   instant dry yeast (10 g)
  • 500 ml     lukewarm water
  • Your choice of topping eg oats or seeds

Recipe Method

  1. Microwave the packet of sweet potato using the easy the on-pack instructions. Cook 3 minutes more than the suggested time to make it really soft to mash. Tip the contents into a large bowl and mash very well.
  2. Using a wooden spoon mix in the flour and salt.
  3. Sprinkle over the yeast and mix in evenly, followed by the lukewarm water, mixing to a soft dough. Add an extra 125 ml lukewarm water if the mixture is not coming together easily. Knead on a lightly floured work top until smooth and spongy. Place back into the mixing bowl, rub on a coating of oil, cover and leave to rise in a sunny spot until double its original size.
  4. Knock it down, then shape the dough into 12 orange-size balls, placed in rows on a greased baking tin, well-spaced apart.
  5. Brush over some milk and sprinkle over your choice of topping such as oats, seeds etc.
  6. Leave lightly covered in a warm place for the dough to rise again.  During this time, pre-heat oven to 200 º C.
  7. Bake for 25 minutes.

Hints & Tips

  • Adding seeds like sunflower seeds or pumpkin seeds makes this bread even more nutritious
  • Lukewarm means blood temperature; hotter will destroy the yeast action
  • Experiment with an electric bread maker if you have one in your home.
