1. Pre-heat oven to 190 º C. Grease a shallow baking tin measuring approximately 15 x 25 cm. 2. In a bowl, measure out all the ingredients and slowly blend on low speed to combine well. 3. Spoon the mixture into the baking tin, level off and bake for 20 minutes. 4. When cool, sieve icing sugar over generously, then slice into squares. 5. Store in an airtight container in a single layer.
The cranberries may be substituted with an equivalent amount of combined dried fruit cake mix and coconut.
