Pork Belly Roast

To add flavour and crunch, score the belly fat with a sharp knife making horizontal lines. Rub in a little salt, pepper, paprika and oil. Roast as usual.

Oven Bake

Preheat oven to 180 °C. Place belly roast fat side up onto a greased oven tray and place in oven. Cook for 45 minutes, until golden brown in colour, and the roast has reached a core temperature of 75 °C. To render the fat further and for crackling effect, increase the oven temperature to 240 °C and grill for a further 10 minutes. Remove from oven and allow to rest before serving.
