Recipe Ingredients

Potato Nests

  • 6 SPAR Freshline potatoes, peeled and grated
  • 45ml SPAR olive oil
  • Melted SPAR butter, to brush

 To serve

  • Boiled eggs, halved, to top
  • Chunks of SPAR Freshline avocado

 Garnish

  • Edible flowers and SPAR Freshline herbs

Recipe Method

  1. Preheat the oven to 200°C, fan setting.
  2. Add the grated potatoes to a bowl and season generously with salt. Allow to stand for 15 minutes.
  3. Grease a cupcake pan until needed. You will have enough potato mixture to do more than 1 tray.
  4. Squeeze the water out of the potatoes, add the olive oil and stir through.
  5. Press the potato mixture into the muffin pan to create nests, then brush the nests with butter.
  6. Bake in the preheated oven until golden brown, about 20 – 30 minutes in total.
  7. Serve topped with halved boiled eggs, avocado and garnish with herbs and flowers.
