Strawberry Rooibos Iced Tea Recipe

Fresh strawberry syrup combined with Rooibos and lemon juice makes a delicious iced tea.

Recipe Ingredients

  • 4 cups SPAR Freshline strawberries
  • 2 cups SPAR white sugar
  • 10 cups water
  • 6 regular rooibos tea bags
  • 2 cups water, boiling water
  • 1 whole SPAR Freshline lemon, juiced
  • Ice cubes

Garnish

  • SPAR Freshline mint, lemon slices and strawberry slices
 
 

Recipe Method

  1. Rinse strawberries and pat dry.
  2. Cut into small pieces and place into a saucepan.
  3. Add 1 cup sugar and 2 cups water to make simple syrup.
  4. Bring to the boil then turn down heat and simmer for 20 minutes continuously stirring.
  5. Remove saucepan from heat and set aside to cool for 5 minutes.
  6. Strain strawberries through a strainer and extract as much juice from the berries by pressing it with the back of spoon.
  7. Steep the tea: place teabags into a jug and pour in 2 cups of boiling water. Set aside to draw for 5 minutes.
  8. Remove tea bags from the jug and add 1 cup of sugar.
  9. Stir well until sugar is dissolved.
  10. Pour the tea into a large jug.
  11. Add 8 cups of water, strawberry simple syrup, lemon juice and stir well.
  12. Cover and refrigerate for 2 hours.
  13. When ready to serve: add ice cubes, fresh mint, lemon slices and strawberry slices. Serve immediately.
